Rotissere-Style Chicken

1 – 5 to 6 lb chicken, skinned
2 t kosher salt
1 t paprika
1 t onion powder
1/2 t dried thyme
1 t Italian seasoning
1/2 t Cayenne pepper
1/2 t black pepper
4 whole garlic cloves
1 yellow onion, quartered

Remove and discard chicken skin and innards.  It a bowl, combine all of the dried spices.  Rub the spice mixture all over the bird, inside and out.  Place the bird breast side down in the crockpot.  If desired, place garlic cloves and onion quarters inside the bird.

DO NOT ADD WATER!!

Cover and cook on high 4-5 hours or on low for 8 hours.
